The brief

Making a narrow building feel more spacious and extending the kitchen's Scandinavian influence, while respecting the authentic elements of the old butcher's shop.

In this project

  • Interior design in a former butcher's shop
  • Glass roof for daylight
  • Slanted colour fields in the dining room
  • Bar in pink natural stone and blue MDF

Restaurant Souvenir moved from Ypres to a former butcher's shop in Ghent: a glass roof, slanted colour fields and a bar in pink natural stone.

Icelandic chef Vilhjalmur Sigurdarson and his partner Joke Michiel moved their restaurant Souvenir from Ypres to a former butcher's shop in the centre of Ghent. After the move, Sigurdarson's focus shifted more than ever to fish and vegetables. The result is an uncompromising, robust kitchen with a clear Nordic touch.

Some authentic elements of the butcher's shop, such as the ceilings and mantelpieces, have been retained. The Scandinavian influence was continued in the light hearted interior. To increase the sense of space in the narrow building, natural light is drawn in through a glass roof. In the dining room, slanted graphic colour fields enhance the sense of perspective.

The bar, on the other hand, exudes pure luxury with its pink natural stone top and a playful upstand in deep blue MDF, while the subway tiles mischievously wink at the authenticity of the building.
